SPICY MEXICAN RICE WITH PULLED PORK AND CHIPOTLE AND PINEAPPLE HOT SAUCE

Add some heat to your Mexican rice with pulled pork and a tangy kick of Chipotle and Pineapple hot sauce.

Ingredients:

  • 1 tbsp of oil
  • 1 shallot, diced
  • 50 gr of chopped tomatoes, from a can
  • 3 tbsp of Chipotle and Pineapple hot sauce
  • Salt and black pepper to taste
  • 100 gr of cooked rice
  • 50 gr of pulled pork

 

 

Recipe Tips:

  • Use day-old rice for a better texture and flavour absorption.

Method of Preparation:

  1. In a hot pan add oil and start by cooking the shallots.
  2. After 2 minutes, add in the pulled pork, chopped tomatoes and Chipotle and Pineapple hot sauce.
  3. Season with salt and black pepper.
  4. Cook for 2 minutes and then add in the cooked rice.
  5. Cook for another 2 minutes and serve.
