A rich and spicy roasted pepper and tomato soup enhanced with the unique flavour of Carolina Reaper and Blueberry hot sauce.
Ingredients (for 2-3 servings):
- 1 clove of garlic, chopped
- 1 head of red onion, chopped
- 200 gr of chopped tomatoes, from a can
- 2-3 roma tomatoes, chopped
- 2 red bell peppers, roasted, peeled and deseeded
- 1 l of vegetable stock
- Salt and black pepper to taste
- 2 sprigs of fresh thyme, leaves only
- 1 tsp of dried oregano
- 1 tbsp of sugar
- 3 tbsp of Carolina Reaper and Blueberry hot sauce
Recipe Tips:
- Roasting the peppers beforehand enhances their natural sweetness and depth of flavour.
Method of Preparation:
- In a soup pot, add all of the ingredients and start cooking on a medium heat.
- Let the soup simmer for about 30 minutes and then add in a blender.
- Blend until smooth.
