ROASTED PEPPER AND TOMATO SOUP WITH CAROLINA REAPER AND BLUEBERRY HOT SAUCE

A rich and spicy roasted pepper and tomato soup enhanced with the unique flavour of Carolina Reaper and Blueberry hot sauce.

Ingredients (for 2-3 servings):

  • 1 clove of garlic, chopped
  • 1 head of red onion, chopped
  • 200 gr of chopped tomatoes, from a can
  • 2-3 roma tomatoes, chopped
  • 2 red bell peppers, roasted, peeled and deseeded
  • 1 l of vegetable stock
  • Salt and black pepper to taste
  • 2 sprigs of fresh thyme, leaves only
  • 1 tsp of dried oregano
  • 1 tbsp of sugar
  • 3 tbsp of Carolina Reaper and Blueberry hot sauce

Recipe Tips:

  • Roasting the peppers beforehand enhances their natural sweetness and depth of flavour.

Method of Preparation:

  1. In a soup pot, add all of the ingredients and start cooking on a medium heat.
  2. Let the soup simmer for about 30 minutes and then add in a blender.
  3. Blend until smooth.
